The bistro's origins
The bistro, in its original incarnation, was a small
restaurant serving moderately priced meals in a modest
setting. Bistros are defined mostly by the foods they serve.

Bistros, sometimes spelled
bistrot, grew out of the
basement kitchens of Parisian apartments where tenants
paid for both room and board, then landlords opened their
kitchen to the hungry public. Menus were simple and wine
and coffee were also served. As tables were squeezed in
to fit in customers, table service was added. Over time,
architecture and menus both became more refined and
took on the character and cuisine of the cities and
countries to which they spread.

Cocoa's take on the classic bistro
Cocoa will follow in the tradition of the bistro in its first location, right down to its location on the ground floor of a
residential building at
Liberty Harbor in downtown Jersey City.

Our decor will be simple and understated, allowing our food to serve as the centerpiece of attention. Our open
kitchen we hope will allow patrons to see firsthand the care and attention we take in our craft.
Our seating will feature banquets for
more intimate occasions or tables may
be combined for larger parties. Diners
may also choose to be seated at our
dessert bar where desserts will be
prepared and plated before them as
they dine.

In warmer months, our doors can be
folded back to allow patrons to dine al
fresco.

The bistro has the capacity to seat
nearly 50 guests, including the seating
at our dessert bar. Additional seating
may be added when our French doors
are open and our bakery can seat
another 16 patrons.

Our menu will offer classic bistro fare, while some dishes will have accents from other cuisines. The menu will
change throughout the year to take advantage of what's in season, though our favorite items will remain
year-round.

For those that enjoy wine or spirits with their meal, Cocoa has a delivery arrangement with
Jersey Wines &
Spirits
, or patrons may choose to bring their own bottle to our dining room table.
